Every year, 150 grape harvesters manually pick grapes that have reached optimal ripeness. The winemaking process is semi-carbonic. This is a traditional technique in Beaujolais, which involves fermenting the grapes with their stems. The fermentation thus begins inside the berry, which contains all the future fruit and the aroma of the grape.
