De la r\u00e9colte \u00e0 l\u2019\u00e9levage<\/h2>

La r\u00e9colte vendang\u00e9e essentiellement \u00e0 la main est ensuite tri\u00e9e puis \u00e9grapp\u00e9e partiellement ou totalement suivant le profil recherch\u00e9. Elle est ensuite mise en cuve pour une mac\u00e9ration semi-carbonique ou bourguignonne d\u2019une dur\u00e9e variable selon les vins. La mac\u00e9ration peut durer de 4 \u00e0 5 jours pour le Beaujolais Nouveau jusqu\u2019\u00e0 15 \u00e0 20 jours pour nos crus.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t

L\u2019\u00e9levage en cuve inox est privil\u00e9gi\u00e9 pour certaines de nos cuv\u00e9es permettant d\u2019exprimer la fra\u00eecheur du fruit et sa gourmandise. L\u2019\u00e9levage en f\u00fbt de ch\u00eane apporte davantage de tanins et plus de complexit\u00e9 aux vins. \u00c0 terroir unique, cuv\u00e9e unique<\/h2>

La palette des terroirs du Ch\u00e2teau de Corcelles est multiple et permet ainsi la cr\u00e9ation de nouvelles cuv\u00e9es. Aujourd\u2019hui, le domaine se veut encore plus restrictif et pr\u00e9cis dans l\u2019\u00e9laboration de ses cuv\u00e9es, en les limitant \u00e0 des terroirs uniques, et \u00e0 fort potentiel : il s\u2019agit d\u2019une s\u00e9lection parcellaire, comme notre Brouilly lieu-dit \u00ab Les Roches \u00bb, parcelle la plus m\u00e9ridionale de l\u2019appellation Brouilly, au caract\u00e8re tr\u00e8s pr\u00e9sent issu de la faible profondeur des sols et de la roche affleurante.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t
