In the silence of the cellars, the Ch\u00e2teau Escalette team \u201cproduces a wine whose reputation has been established for years\u201d, \u201ca fine and generous wine\u201d as written by Cocks & F\u00e9ret in their work which is still a reference today, Bordeaux and Its Wines Classified in Order of merit (1868). Each batch is vinified and aged separately according to its plot origin and typicity.<\/p>

The most critical work is done in the vineyard so that the grapes that arrive in the cellar are healthy and at optimal maturity. The berries are then destemmed and carefully sorted to keep only the best of the harvest.
